We use only top-quality grains, stone-milled at the bakery less than 24 hours before baking.
Our flours undergo no sifting (separation); every component of the grain is preserved in its entirety. No added gluten.
The ingredients speak for themselves.
Sourdough Breads
(no yeast, no oil, no sugar)
The sourdough culture consists only of water and flour from the same grain as the bread.
Spelt

Kamut

16 Grains (Wheat-Free)
Water, kamut, spelt, sourdough culture, 11 milled grains (barley, oats, rye, rice, green lentils, spelt, soy, buckwheat, corn, millet, flax), sea salt, millet, hemp, amaranth, flax.
Wheat with Sesame or Sunflower
Wheat, water, sourdough culture, sesame or sunflower, sea salt.
Rye (Friday only)

Yeast Breads

Except for the raisin bread, which contains honey.
Raisin

Baked Goods
Developed through many trials, our recipes combine the flavors of fresh fruits, the richness of dried fruits (natural sweeteners), and the nutritional qualities of whole grains milled daily at the bakery.
In all our muffins, fruit is always the first ingredient.
No sugar enters our bakery.
